Ingredients:
3 Eggs
110g Sugar
110g Melted Butter
200g very ripe Bananas
160g (1 cup) all-purpose flour
¾ Tsp. Baking Powder
¾ Tsp. Baking Soda
a pinch of Salt
Frosting Ingredients:
1 ripe Banana, mashed (not overripe!)
1/2 cup (1 stick) Butter, softened
1 tsp Lemon Juice
1/2 tsp Vanilla Extract
pinch of Salt
3 cups Powdered Sugar
Rice Cooker Cake - Banana

Sift the flour, baking powder, baking soda and salt in a big bowl and set aside.

Melt butter and sugar and set a side to cool a while.

Mash the bananas with a fork or food processor and set aside.

Add the beaten eggs to the melted butter and mix well using a whisk or spatula.

Add the mashed bananas and mix well again.

Finally fold in the sifted flour mixture over 3 times using a spatula.

Pour the cake batter into the greased rice cooker bowl.

Press cook and allow it to cook at least one hour. It will switch to “Keep Warm” very fast, so just wait until the cooker allows you to switch on “Cook” again. Repeat this as long as toothpick inserted comes out clean. You can insert a long toothpick through the steaming whole of the cover.

If ready put in the steam rack and turn flip your pot. Let your cake cool.

If you want you can top your cake with any frosting you prefer now.
Frosting Banana Buttercream

Cream together the banana, butter, lemon juice, vanilla and salt.

Beat in the powdered sugar, 1 cup at a time, until you have a creamy and spreadable frosting.
