Ingredients:
500g Chicken Breast
2 Onions
2 Carrots
1 rod Leek
100g Bean Sprouts
½ White Cabbage
1L Chicken Broth
200g Glass Noodles
500g Pancit Canton Noodles
4 Tbsp. Soya Sauce
1 L Chicken Broth
Magic Sarap or Maggi Seasoning
Calamansi or Citron
Tip: If you want to save time just buy a frozen vegetable mix in a supermarket and add what is missing.
Pancit

Twist of the ends of the bean sprouts (If you are in a hurry you can skip this step, but I recommend to do it, because the ends contain bitter principles).

Cut the vegetables and the chicken breast into serving pieces.

Stir fry your vegetable and your chicken until they are done.

Parallel to that cook your noodles.

Now take a big pot and bring everything together.

Add the chicken broth and let it simmer until the liquid is almost gone.

Stir everything once in a while to make sure nothing sticks at the bottom.

Add soya sauce and adjust less or more just as you wish. Mix well.

Season it with Magic Sarap or Maggi Seasoning and stir.

When you notice, that the liquid has completely disappeared and it started frying, just stir fry it for no longer than 5-8 minutes.

Serve with calamansi or citron, which is used to sprinkle all over the noodles. It gives the pancit a well fresh taste and prevents a dry taste.
