Ingredients
500 grams pork belly, cut into serving pieces
1 cup water
3 cloves garlic, crushed
1/3 cup vinegar
1/4 cup brown sugar
1/4 cup soy sauce
1 bay leaf
1 teaspoon peppercorns
1/2 cup dried banana blossoms (substitute: artichokes)
salt to taste
Humba Pork

In a big pot, combine pork belly, water, soy sauce and garlic.

Simmer and bring to boil over low heat until pork belly is tender.

Add vinegar and simmer for another 3 minutes.

Add the bay leaf, banana blossoms, brown sugar, salt and simmer for another 5 minutes.

Adjust seasoning according to taste. Remove from heat and Serve.

Note: You may also add potatoes, hard-boiled eggs or salted black beans.
